No Chop Butternut Soup-2
A creamy and comforting butternut soup without the hassle of chopping, perfect for a cozy meal on a chilly day.
Ingredients:
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup heavy cream optional
- Fresh parsley or cilantro for garnish optional
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, saut until softened, about 5 minutes
Add cubed butternut squash, vegetable broth, ground cumin, ground cinnamon, salt, and pepper
Bring to a boil
Reduce heat and simmer for 20-25 minutes until butternut squash is tender
Use an immersion blender to puree the soup until smooth
Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot
Stir in heavy cream if using and adjust seasoning if necessary
Serve hot, garnished with fresh parsley or cilantro if desired
