Sweet Potato Crust Broccoli Cheese Quiche



A delightful quiche with a twist, featuring a crust made from sweet potato and filled with broccoli and cheesy goodness.

Ingredients:

  • 2 cups grated sweet potato
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup chopped broccoli florets
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions:

Preheat oven to 375F 190C

In a bowl, mix grated sweet potato, olive oil, salt, and pepper

Press the mixture into a tart pan to form a crust

Bake for 15 minutes

Meanwhile, steam the broccoli until slightly tender

In another bowl, whisk together eggs, milk, garlic powder, onion powder, and paprika

Spread steamed broccoli over the sweet potato crust

Pour the egg mixture over the broccoli

Sprinkle shredded cheddar cheese on top

Bake for 30-35 minutes or until the center is set and the edges are golden brown

Let it cool slightly before slicing and serving
